    • In a separate bowl, combine the peaches, sugar, cornstarch, salt, cinnamon, lemon juice and vanilla until evenly coated.

    • Pour the peach mixture into the baking dish and sprinkle the oat mixture evenly over the top. Bake for 30 minutes until the topping is golden brown and the filling is bubbly. Let the peach crisp cool for at least 10 minutes before serving. Enjoy warm with ice cream, whipped cream, or yogurt.
